HONEY & MAPLE BUTTER ROASTED SWEET POTATOE

Body by sweet potatoes.



2lbs sweet potatoes - peeled and chopped (I’m not normally a peeled sweet potato girl but I do think it really makes it better in this recipe) 

½ onion (I used a red onion but use any onion you love or have on hand) 

2 TB melted butter 

¼ cup olive oil 

¼ cup honey (or maple syrup, I've done both. I’ve even done brown sugar) 

Salt + pepper 

Any additional herbs you might want to add - rosemary + thyme are two favorites 

Optional spice: ¼ cup harissa or 2 TB hot sauce 


Toss everything together and line evenly on a tray. Bake in a 425 degree oven for 30-40 minutes, until they are sticky and crispy. Let them cool so they firm up a bit.
