COMFORT PEANUT BUTTER COOKIES

Cookies can be like hugs.

1 ½ cups flour
½ cup brown sugar
½ tsp baking powder
¾ tsp salt
¼ tsp baking soda
¼ tsp cinnamon
¼ cup slivered almonds
1 stick butter - softened
⅓ cup peanut butter
2 TB honey
1 egg + 1 egg yolk
1 tsp almond extract
Mix together all the dry from the flour to the slivered almonds. Add in the wet from the butter to the almond extract. Form into a dough. Scoop 1oz cookie scoops onto a parchment lined tray. Sprinkle with sugar and flake salt. I prefer not to press them down because I like the texture best when I have more cookie to bite into, but if you’re a sucker for the classic fork press on a peanut butter cookie go for it, adjust the bake time though. Bake in a 350 degree oven for 10-12 minutes until just browning on the bottom.




I love how simple and cozy this recipe is, and the little tip about skipping the fork press is something I'd definitely try. When I'm taking a break from baking, I usually play Subway Surfers Online for a few minutes—it's a fun way to relax before getting back to the kitchen.
