SUMMER RICOTTA CAKE

The best way to enjoy the summer: eat cake, lay by the pool, read a book and chill out. 



1/4lb butter - melted 

1 cup sugar

1 egg

1 ½ cups flour 

1 ½ tsp baking powder

1 tsp salt 

¾ cup ricotta cheese

2 cups any berry of your choosing 


Whisk together the butter, sugar + egg. Slowly add in the dry ingredients. Whisk in the ricotta cheese + fold in the berries. Pour into a cake pan. Bake at 325 for 20-30 minutes - until a knife comes out dry.
