STRAWBERRY SYRUP

12oz strawberries - chopped

1 cup sugar

1 cup water 


Combine all ingredients in a pot and bring to a boil. Once it boils reduce it to a simmer for about 15 minutes - basically until the strawberries are very soft, cooked down and the syrup is very red. Once you reach that point to get a smooth strawberry syrup you can strain it (over a sieve into a container, pressing down lightly to get the syrup out) or you can blend it if you don’t mind a thicker syrup (more of a puree). For adding to drinks I like it thin and I strain it.
