RYE BANANA BREAD

I’ll never quit loving rye.

1 ½ cups flour

½ cup rye flour

2 tsp baking powder

1 tsp baking soda

1 tsp salt

1 TB cinnamon

1 TB ginger

½ tsp cloves

2 bananas - mashed

2 eggs

1 cup milk

2 TB vinegar

½ cup honey

Whisk together the dry. Make a well and add in the wet (starting at the bananas). Mix all together very well. Pour into a loaf pan (lined or buttered) and baked in a 350 degree oven for about an hour, until the middle has risen and a knife comes out clean.

This recipe sounds wonderfully simple and comforting. The combination of banana, honey, cinnamon, and ginger must create a rich flavor and a great aroma while baking. I’m always looking for easy homemade treats like this to enjoy during a break after playing Slope Rider, a fun downhill obstacle game that requires quick reflexes and focus. Homemade banana bread and a relaxing game session make a perfect combination.
