PUMPKIN SANDWICH BREAD

Like a festive pillow.



2 TB yeast

½ cup honey 

2 ½ cups warm water

8 cups flour 

1 ½ TB salt

1 stick butter (melted)

1 cup pumpkin puree


Whisk together the yeast, honey and warm water. Let sit and activate. Add in the flour, salt, butter and pumpkin puree and knead into a dough ball. Continue to knead for about 5 minutes until it is a smooth bowl. Cover it and let rise for 45-60 minutes (double in size). Once doubled, divide into two portions and put in two greased loaf pans. Let rest 30-45 minutes again (allowing it to fill the pan). Bake in a 350 degree oven for 35-45 minutes - until it is golden brown and does not sink in.
