PEANUT NOODLE SALAD

Salad Ingredients:
8oz noodles - I used linguine, boiled, drained and chilled
1 cup sliced red cabbage
1 cup sliced green cabbage
1 bunch cilantro - chopped
1 sliced red pepper
1 cup grated carrots
2-3 scallions - chopped
½ cup peanut
¼ cup pickled jalapenos
Mix everything together and dress as you wish with the dressing.
Peanut Dressing:
½ cup peanut butter
¼ cup tamari
¼ cup rice vinegar
1 TB sesame oil
2 TB sriracha
2 TB honey
1 TB grated ginger
2TB - ¼ cup water - to thin as needed
Whisk or blend together until smooth.
