GREEKISH GREEN BEAN SALAD

This is a good salad for this time of year since it’s still pretty warm out but you want to feel cozy. A fresh, crunchy salad with roasted green beans + onions. 

1 head romaine - chopped

¼ onion - chopped 

2 cups green beans - roasted with the onions 

½ avocado - cubed

½ cup feta cheese - crumbled 

2 pickle spears - chopped 

½ tsp fresh thyme 

¼ cup pickled peppers 

¼ cup black olives 

Greekish dressing - recipe follows 

Toss everything together in a bowl with as much dressing as you want! 

Greekish Dressing: 

1 cup EVOO 

½ cup red wine vinegar 

1 TB sugar 

1 tsp dried oregano 

1 tsp black pepper 

1 tsp salt 

2 TB dijon mustard 

2 garlic cloves - minced

½ cup crumbled feta 

Whisk everything together
