I’ll never stop my love affair with butter, and I hope you don’t either. Eat this cake smothered with more butter, or you could also cover it with creme fraiche and berry jam. Both are great, and both get your butter fix for the moment. 

Butter Cake: 

3 cups flour

1 tsp baking powder

½ tsp baking soda 

1 tsp salt 

½ lb butter (melted)

2 cups sugar 

4 eggs

1 cup buttermilk (or you can do 1 cup heavy cream + 2 TB vinegar, make this before you start the cake)

Preheat oven to 350

Grease 2 loaf pans 

Whisk together by hand the flour, baking powder, baking soda, + salt. Make a well in the middle and add in the melted butter, sugar, eggs + buttermilk. Whisk thoroughly and then slowly integrate the dry ingredients. Whisk it just enough so taht it is smooth and combined. 

Pour into your 2 loaf pans. Bake 30-40 until the top middle bounces back and knife inserted comes out clean. Let cool.
