BEET SYRUP

A delicious addition to a latte (ours is affectionately named My Heart Beets For You at The Harbinger).

Beet Syrup:
1 large beets (or 2 small beets) - peeled + chopped small
1 cup sugar
2 cups boiling water
½ tsp vanilla bean paste
Blend everything until it is smooth. Use a sieve or cheesecloth and strain it through, squeezing all the juice out. Discard the pulp, save the syrup.
Mix into everything you want! We use 2TB per 8oz drink. But beet syrup your heart out!
