PEPPER & PEACH SALAD

4 red/yellow/orange peppers - pithed and chopped
1 peach - chopped
1 ear of corn - roasted and corn removed from the cob
¼ red onion - chopped
1 cup shredded mozzarella
1 bunch parsley - chopped
2 TB honey
¼ cup red wine vinegar
1 TB salt
1 TB red chili flakes
1 tsp black pepper
Toss everything together and go at it!
PEPPER & PEACH SALAD looks absolutely delicious! The combination of sweet peaches, crisp peppers, and fresh ingredients creates a colorful dish that seems both refreshing and flavorful. I love recipes that balance sweet and savory elements, and this salad appears to do that perfectly. The vibrant presentation makes it even more appealing. I think this would be a great side dish for a summer meal, and afterward I might relax with a quick game of Basket Random while enjoying the leftovers.
