Now that the heat has fully 'entered the room', this easy summer salad will have you feeling refreshed and full. Add anything else you want to it, but this is how I love it!
2 cans black beans - drained (obviously)
2 cups edamame
1 apple - small dice
2 carrots - small dice
2-4 scallions - chopped
1 cup cheddar cheese
¼ cup sunflower seeds
2 TB sriracha sauce
1 cup mayonnaise
2 TB lemon juice
¼ cup oil (neutral like canola)
1 TB salt
½ tsp chili flakes
Toss everything together! It’s great day-of, but really good when it has time to chill. I can relate. ;)
